Being from NYC you would think I have seen and tasted it all…never heafd of this one found a neew reciope to share, but it really looks good and healthy (I think)! But I’ll try it and let you guys kniw what I think….here is also a link for Healthy Protein Bars.

Recipe File: White Gazpacho

 

Today Elizabeth Stein is back with another healthy and delicious meal! Elizabeth is a holistic nutrition counselor and founder of purely elizabeth, a line of all-natural foods you can feel good about! Perfect for these lingering summer nights—and as a light lunch the following afternoon—this White Gazpacho is a refreshing twist on the classic cool soup. 

INGREDIENTS

  • 1 large cucumber (peeled, seeded and chopped)
  • 1 ¼ cups seedless green grapes
  • ¼ cup blanched almonds
  • ¼ cup almond milk, unsweetened
  • ½ clove garlic
  • ½ tbsp chopped shallot
  • 1 tbsp red wine vinegar
  • 2 tbsp flaxseed
  • ½ tsp Himalayan salt
  • ½ cup chopped tomatoes

DIRECTIONS

Put cucumber, grapes, almonds, almond milk, garlic, shallot, red wine vinegar and flaxseed into a blender and purée until smooth, about 2 minutes. The finished texture should be smooth, creamy and just a bit grainy from the almonds. Season to taste with salt, then transfer gazpacho to a bowl. Cover and refrigerate until well chilled. When ready to serve, pour gazpacho into bowls and garnish with sliced tomatoes.
